I have a slice of key lime cheesecake in my refrigerator, with which I am in love. The pie, not the appliance.

Cheesecake really does make me terribly happy. It's such an interesting dessert with deep spiritual import.
The flavor and texture are positively rapturous. Yet, if I consume too much, the magic gives way to a belly ache, and pants that won't button.
The beauty can only be fully enjoyed when married to moderation.
I have this personality defect where I am always craning ahead to see what's next. Some people call it impatience.
I prefer to think of it as enthusiasm.
If only I would remember to inhale each moment, and exalt in the Now! I think I would be less tempted to strain ahead into a future that is uncertain. So often I love what I've got, so I imagine more, or the next ...whatever. I get greedy with the good stuff.
It's like that cheesecake. As soon as I get greedy, I ravage the beauty.
The only way to really possess the beauty, is with self discipline, and intensity in the moment. I need to love what's right in front of me, instead of jumping ahead.

Although the wiki entry does not go into this, I also once heart that it (they pie, not the lime) was invented when a large hurricane wiped out the lemon population. They poor "Floridian" residents couldn't make their delicious lemon pies anymore. Someone got the wonderful idea to substitute lime. I believe this happened in the Key region of the sunshine state.
I don't know if I approve of a cheesecake version, though.
Of course, I am male and I hate cheesecake. Much prefer more substantial desserts, like espresso with lots of milk and something Irish.

They are really small, size of a quarter, limes with an intense flavor. You can use regular lime in any key lime recipe but the flavor just is not the same.
Zen, the excuse used by those whom want to do, what they want to do, when they want to, and usually at other's expense - because it all works out in the end..... Ok, I am not a believer in the finer points of eastern thought.
